Flank steak with shallot & mashed broccoli

Flank steak
250 g
Broccoli (fresh)
1/2
Shallot
40 g
Butter (unsalted)

- Step 1
Boil a large pot of water. Cut the broccoli into medium-sized florets*. *Check out our tips for this step - Step 2
Add the broccoli to the boiling water and cook for 10 minutes, or until fork tender. - Step 3
In the meantime, chop the shallots. - Step 4
In a pan on medium heat, melt a dab of butter (1 teaspoon per person) and cook the shallots for 2 minutes. - Step 5
Add the rest of the butter (1 more teaspoon per person), the flank steak and cook for 2 minutes on each side. Cook longer according to how you like your meat cooked. - Step 6
Season with salt & pepper. Remove the steak from the pan once cooked to your liking. Add some water to the pan to deglaze. Let the jus reduce for 2 minutes. - Step 7
Add the steak back to the pan with the jus. - Step 8
Drain the broccoli and mash it until smooth with the rest of the butter (2 teaspoons per person). Season with salt & pepper. - Step 9
Slice the steak. - Step 10
Serve the meat with the mashed broccoli and the jus from the pan. Enjoy!
