- Step 1
Peel and slice the onions. - Step 2
Heat a drizzle of olive oil in a pan over high heat and add the onions (reserve a few slices for garnish). Cook for 2 minutes, stirring frequently. - Step 3
Add the chickpeas to the pan. Season with salt and pepper and cook for 3 minutes, stirring frequently. - Step 4
Add the tomato purée and stir to mix. - Step 5
Using a wooden spoon or spatula, make wells in the tomato and onion mixture and crack the eggs into the wells. Cook for 2 minutes over medium heat, then cover and let cook for an additional 3 minutes. - Step 6
Remove from heat and add the crumbled feta and a few slices of red onion. Optiional: Top with some fresh green herbs, like basil, cilantro or parsley. Enjoy with slices of hearty bread!
