Espelette Pepper Chicken with Rice & Broccoli

Chicken breast

White rice (long grain)
100 g
Broccoli (fresh)
1/2 tsp
Mild chile powder, ground (Espelette)

In a pot of boiling salted water, cook the rice according to package instructions. Once cooked through, drain the rice. - Step 2
Meanwhile, wash then cut the broccoli into bite-sized florets. - Step 3
Cook the broccoli in a pan of boiling salted water for 6 minutes. Once cooked through, drain the broccoli. - Step 4
Meanwhile, heat a drizzle of olive oil in a pan over medium heat. Add the chicken & coat in half of the Espelette pepper. Season with salt & pepper & sear undisturbed for 4-5 mins. - Step 5
Flip the chicken & season with the remaining Espelette pepper, a pinch of salt & pepper. Sear for another 4-5 min on the second side. - Step 6
Serve the chicken with the rice & broccoli. Season everything to taste & enjoy !
