- Step 1
Preheat the oven to 200°C. Wash then cut off the ends of the endives. Cut them in half lengthwise. - Step 2
Prepare the caramel. In a pan, add : the butter & sugar. Cook for 3-4 min, on medium heat, while stirring. - Step 3
Add the endive & continue cooking for 3 min on each side. - Step 4
Deglaze with balsamic vinegar & season with salt & pepper. Mix then cover & let it simmer for 5 min, over low heat. - Step 5
Spread the endives evenly in a pie dish (we used a 31 cm diameter dish here), lined with parchment paper. - Step 6
Cover the endives with the puff pastry & fold the edges over. Puncture the dough with a fork, then bake for 20 min at 200°C. - Step 7
Once the puff pastry is golden brown & cooked through, take the dish out of the oven. Allow to cool completely before removing the tart from the dish. - Step 8
Top with crumbled blue cheese & serve with a side of salad seasoned to taste. Enjoy !
