- Step 1
Preheat the oven to 200°C. Wash the endives, cut off the ends, and cut them in half lengthwise. - Step 2
In a frying pan on high heat, melt the butter with the sugar. Add the endives. - Step 3
Brown the endives for 3 minutes on one side. Flip and cook for another 2 minutes. - Step 4
Add the vinegar, salt & pepper. Lower the heat to low, cover, and cook for an additional 5 minutes, while continuing to stir frequently. - Step 5
Optional: add a layer of parchment paper to the bottom of your pie dish to make it easier to remove. - Step 6
Transfer the endives to a pie dish and spread out evenly. - Step 7
Place the puff pastry on top of the endives, folding the edges over the top. - Step 8
Using a fork, pierce the dough a few times and bake at 200°C for 20 minutes. - Step 9
Once golden brown, remove from the oven and let cool for 5 minutes. - Step 10
To flip the tart, place a large plate over the pie dish and holding together, flip in one quick move. - Step 11
Add the crumbled blue cheese on top. Serve with a green salad and enjoy!
