Egg & Veggie Fried Rice

White rice (long grain)

Green cabbage

Carrots (fresh)

Yellow onion

- Step 1
Cook the rice according to package instructions. Once cooked through, drain & rinse under cold water to cool down. Set aside. - Step 2
Meanwhile, peel & finely dice the onions. - Step 3
Wash & finely slice the cabbage into thin strips. Cut the slices into small pieces. - Step 4
Peel the carrots & slice them in half lengthwise. Slice into thin half-moons. - Step 5
Heat a drizzle of oil in a pan over medium heat. Add the onion, cabbage & carrots to the pan along with a splash of water (a tbsp. per person). Season with salt & pepper. Mix, cover & leave to cook for 7-8 min. - Step 6
Add the cooled down rice to the pan & sauté for 2-3 mins, until lightly golden, stirring occasionally. - Step 7
Add the soy sauce. Continue cooking while stirring for 2-3 mins, until the rice is lighly toasted & golden. - Step 8
Create some space in the pan. Crack the eggs & scramble them for 2 mins, on medium heat. Mix the scrambled egg with the rice. - Step 9
Serve the veggie fried rice in a bowl. Season to taste & enjoy !
