  • Step 1
    Cook the rice according to package instructions. Once cooked through, drain & rinse under cold water to cool down. Set aside.
  • Step 2
    Meanwhile, peel & finely dice the onions.
  • Step 3
    Wash & finely slice the cabbage into thin strips. Cut the slices into small pieces.
  • Step 4
    Peel the carrots & slice them in half lengthwise. Slice into thin half-moons.
  • Step 5
    Heat a drizzle of oil in a pan over medium heat. Add the onion, cabbage & carrots to the pan along with a splash of water (a tbsp. per person). Season with salt & pepper. Mix, cover & leave to cook for 7-8 min.

    Add the cooled down rice to the pan & sauté for 2-3 mins, until lightly golden, stirring occasionally.
  • Step 7
    Add the soy sauce. Continue cooking while stirring for 2-3 mins, until the rice is lighly toasted & golden.
  • Step 8
    Create some space in the pan. Crack the eggs & scramble them for 2 mins, on medium heat. Mix the scrambled egg with the rice.
  • Step 9
    Serve the veggie fried rice in a bowl. Season to taste & enjoy !
