Pit the avocado, remove the skin and slice into thin strips. - Step 2
Wash the salad and chop in half. - Step 3
Slice the muffins in half and toast them. - Step 4
In a bowl, crack the eggs, adding a pinch of salt and pepper. Mix. - Step 5
In a frying pan on a low heat, add the butter then the eggs, mix with a spatula. The eggs should stay a bit soft, not overcooked. - Step 6
Serve the eggs on top of the muffins, add the salmon on top. Serve with the sliced avocado and dressed salad. Season and serve!
