  • Step 1
    Peel & finely dice the onions.
  • Step 2
    Heat a drizzle of olive oil in a pot, over medium heat. Add the onions, grated garlic & ground beef. Stir to break up the meat.
  • Step 3
    Season with some 'herbes de Provence', salt & pepper. Continue cooking for another 3-4 min, stirring.
  • Step 4
    Add the tomato sauce & the beef stock dissolved in 300ml of hot water per serving. Stir & bring the mixture to a boil.
  • Step 5
    Break up the lasagna sheets & add them to the pot. Simmer for 8-10 min, until the pasta is 'al dente'.
  • Step 6
    Stir in the spinach until wilted, for 1-2 min.
  • Step 7
    Remove the pot from the hob & stir in the grated mozzarella cheese.
  • Step 8
    Serve the cheesy lasagna soup in a bowl. Re-season to taste & top with fresh basil, if you have some. Enjoy !
