Easy Cheesy Lasagna Soup

Lasagna sheets (oven-ready)

Ground beef

Tomato sauce (basil)

Spinach (fresh)

- Step 1
Peel & finely dice the onions. - Step 2
Heat a drizzle of olive oil in a pot, over medium heat. Add the onions, grated garlic & ground beef. Stir to break up the meat. - Step 3
Season with some 'herbes de Provence', salt & pepper. Continue cooking for another 3-4 min, stirring. - Step 4
Add the tomato sauce & the beef stock dissolved in 300ml of hot water per serving. Stir & bring the mixture to a boil. - Step 5
Break up the lasagna sheets & add them to the pot. Simmer for 8-10 min, until the pasta is 'al dente'. - Step 6
Stir in the spinach until wilted, for 1-2 min. - Step 7
Remove the pot from the hob & stir in the grated mozzarella cheese. - Step 8
Serve the cheesy lasagna soup in a bowl. Re-season to taste & top with fresh basil, if you have some. Enjoy !
