Preheat the oven to 240°C. Peel the pears and cut them into quarters. - Step 2
Cut the squash in half, remove the seeds and cut them into thin slices. - Step 3
Score the duck by making a criss-cross pattern in the skin. Place the duck in a baking dish and season each side with salt & pepper. - Step 4
Add the squash and pear around the duck breasts and season with salt & pepper. Sprinkle with rosemary. Add a drizzle of honey and olive oil and mix together. Bake for 10 minutes at 240°C. - Step 5
After 10 minutes, flip the duck and lower the temperature to 200°C. Bake for another 10 minutes. - Step 6
Remove from the oven and serve. Enjoy!
