Duck and mashed sweet potato bake

Duck (confit)
200 g
Sweet potato
1/2
Shallot
1 tbsp
Bread crumbs (plain)
50 ml
Milk (whole)

Peel the sweet potatoes and cut them into cubes. Preheat the oven to 210°C. - Step 2
Boil the sweet potatoes for 10 minutes. - Step 3
Meanwhile, dice the shallots. Remove the duck meat from the thighs, leaving off the fat and the bones. - Step 4
Take the potatoes out of the microwave or remove from the heat, they should be soft (put them back in for 2 more minutes or continue cooking if they're not). Strain. Mash them using a fork, adding a bit of butter or olive oil, milk and salt and pepper. - Step 5
À l'aide d'une fourchette, écrasez les patates douces, ajoutez le lait et un peu de beurre. Salez et poivrez. - Step 6
Place the duck and shallots in an oven-proof dish. - Step 7
Cover with the mashed sweet potatoes, sprinkle on breadcrumbs. (Optional: add a few bits of butter on top so the crumbs go nice and golden) - Step 8
Bake for 15 minutes.
