- Step 1
Preheat the oven to 220°C. In a large bowl, add the butter (softened, not melted). - Step 2
Add the white and brown sugar* (if you don't have brown sugar, use regular sugar). *Check out our tips for this recipe - Step 3
Mix until texture is creamy. - Step 4
Next, add the eggs, a pinch of salt and mix using a whisk. - Step 5
Add in the flour, almond, cocoa powder, baking powder and fold to mix, using a spatula. - Step 6
Roughly break up the chocolate. - Step 7
Add the chocolate to the dough and mix. - Step 8
Using your hands or an ice cream scoop, make 2 inch balls. - Step 9
Optional: roll the balls in sesame seeds for an extra kick! - Step 10
Remove the number of balls necessary, keeping the others in the freezer for easy preparation and freshly baked cookies on another day. - Step 11
Drop the cookies onto a baking tray covered with parchment paper. - Step 12
Gently flatten them with your hand or the back of a spoon and bake for 9-10 minutes at 220°C. - Step 13
Remove the cookies from the oven and let cook for 5 minutes before serving. - Step 14
Top each with a bit of sea salt before serving and enjoy!
Recipe tip
If you wish to reduce sugar quantities, you can remove up to ⅓ of the sugar in this recipe without altering flavor.
