Decadent Zucchini Omelet

- Step 1
Wash and grate the zucchini. - Step 2
Then salt the pieces and place them in a colander in the sink. - Step 3
While the zucchini is in the colander, peel and finely chop the garlic. - Step 4
Chop the fresh herbs as well, but save some of them to use as a garnish. - Step 5
Add the yogurt, cream cheese, minced garlic, chopped herbs, salt, and pepper together in a bowl and mix. - Step 6
In a separate bowl, whisk your eggs with some salt and pepper until they are frothy. (Option: Add ¼ cup of milk per person if you have it.) - Step 7
Squeeze the zucchini in between your hands to wring out any extra water, and then add them to the eggs. - Step 8
In a frying pan on medium heat, drizzle some olive oil and then pour in your egg batter. - Step 9
The actual prep time depends on how many omelets you’re making; they take about 4 minutes each (or until they are golden brown.) - Step 10
Plate the omelet with a large dollop of the cream cheese mixture on the side. Sprinkle with any leftover mint and parsley, salt and pepper to taste, drizzle with olive oil, and enjoy!
