- Step 1
Preheat the oven to 200°C. Wash the carrots & grate them. - Step 2
Wash the zucchini. Slice it in half lengthwise, then cut it into half-moons. - Step 3
Heat a pan & add the spices. Sauté on high heat for 30 seconds. - Step 4
Add a drizzle of olive oil, the carrots & zucchini to the pan. Sauté for 7-8 minutes on medium-high heat. Season with salt & pepper and mix. - Step 5
Meanwhile, in a large bowl, mix : the dairy-free milk, eggs, yogurt, salt & pepper.* *Check out our tips for this step - Step 6
Add the veg into a pie dish (we used a 31 cm diameter dish here) and cover with the milk/yogurt mixture. Bake for 25 minutes at 200°C. - Step 7
Once baked & golden, remove the crustless quiche from the oven & serve . Enjoy !
😋 Gourmet tip
For a truly flavoursome dish, we suggest adding sautées mushrooms ou bacon bits in your quiche mixture & swaping the curry powder for some Madras curry powder !
