Quinoa

Broccoli (fresh)
80 g
Tofu (firm)

Peanut butter

Soy sauce

- Step 1
In a pot of hot water, cook the quinoa for 15 minutes. - Step 2
Meanwhile, wash and chop the broccoli in florets. - Step 3
Chop the tofu in bits. - Step 4
Prepare the sauce. In a bowl, mix the peanut butter & soy sauce. Add a splash of water, if necessary, to dilute the sauce. - Step 5
Add the broccoli to the pot after 10 minutes and cook together with the quinoa for 5 more minutes. Drain once cooked through. - Step 6
In a frying pan, add a bit of olive oil and fry the tofu for 4 minutes. Stop the heat, add the sauce and mix. - Step 7
Serve the quinoa & the brocoli topped with the peanuts, crispy tofu & peanut sauce. Season to taste & enjoy !
