recipe
- Step 1
Bring a pot of salted water to a boil. Cut the broccoli into florets. - Step 2
Add the broccoli to the pot and cook for 10 minutes. - Step 3
Place the chicken on a sheet of plastic wrap. Cover with another sheet, then use a heavy pot, rolling pin or meat tenderizer to pound it into thin cutlets. - Step 4
Meanwhile, lightly beat the egg together with a pinch of salt and pepper in a shallow bowl. - Step 5
Mix the bread crumbs with half of the parmesan and place on a plate. - Step 6
Place the flour on a separate plate. Dip the cutlets in the flour, then the beaten egg, then the bread crumbs. - Step 7
For a thicker crust, dip the breaded cutlets one more time in the egg and then the bread crumbs. - Step 8
Drain the broccoli. - Step 9
Heat 5-10cl of oil in a medium frying pan over medium heat. Once the oil sizzles when a pinch of bread crumbs is added, add the cutlets. - Step 10
Cook over medium heat for 3 minutes on each side, until golden brown. - Step 11
Transfer the cutlets to a paper towel-lined plate. Season to taste with salt, then cut into slices (optional). - Step 12
Plate the chicken with the broccoli, drizzled with a little olive oil. Sprinkle the remaining grated parmesan over the plate and serve!
