Salmon (fresh)
1 tbsp
Bread crumbs (plain)
1 tsp
Parsley (fresh)

Leeks
1/2 tsp
Dijon mustard
1/4 clove

- Step 1
Preheat the oven to 180°C. Remove the green part of the leek* and cut the white part in half the long way. Wash to remove any dirt or impurities. *Check out our tips for this step - Step 2
Put the leeks in a pan with a few spoonfuls of water and cook, covered, on medium heat for 15 minutes. - Step 3
Chop the garlic. - Step 4
Finely chop the parsley. - Step 5
Put the parsley and garlic in a bowl with the breadcrumbs, salt & pepper, and add a spoonful of olive oil per person. Mix to combine. - Step 6
Drain the leeks after 15 minutes. - Step 7
Put the leeks and the salmon on a baking tray. - Step 8
Cover the salmon with a thin layer of mustard and coat in the breadcrumb mixture. Bake for 15 minutes at 180°C. - Step 9
