- Step 1
Heat a drizzle of olive oil in a skillet over medium heat. Add the gnocchi and cook for 2 minutes, stirring occasionally. Cover and continue cooking for 3 minutes over low heat, until golden brown. Set aside. - Step 2
Meanwhile, peel and cut the red onions into thin strips. - Step 3
Heat a drizzle of olive oil in a second skillet over medium heat. Add the red onions, cherry tomatoes, and grated garlic. Season with salt and pepper, and sauté for 2 minutes. Cover and continue cooking for 4 to 5 minutes over low heat. - Step 4
Check the cherry tomatoes are cooked. Add the honey, basil (if you have any), and half of the fresh goat cheese. Mix everything well. - Step 5
Add the gnocchi to the pan with the cherry tomato sauce. Mix again. - Step 6
Serve the tomato gnocchi in a shallow dish or bowl, topped with the prosciutto and the remaining fresh goat cheese. Add a few fresh basil leaves, if you have any leftover, and season to taste. It's ready!
