Creamy Ravioli with Spinach & Sun-Dried Tomatoes

Ravioli (Spinach & ricotta)

20 g
Sun-dried tomatoes

1 tbsp
Crème fraîche

2 handfuls
Spinach (fresh)

1 tbsp
Parmesan (grated)

1/4 clove
Garlic

Drain then slice the sun-dried tomatoes. - Step 2
In a pot of salted boiling water, cook the ravioli according to package instructions. Once cooked through, drain the ravioli. - Step 3
Meanwhile, heat a drizzle of olive oil in a pan, over medium heat. Add the grated garlic & sauté 30 sec, stirring. - Step 4
Add the sun-dried tomatoes & crème fraîche. Mix well. - Step 5
Add the spinach leaves & a splash of water. Continue cooking for another 2 min, stirring. - Step 6
Add the drained ravioli to the pan with the grated parmesan. Season with pepper, and mix to evenly coat. - Step 7
Serve the Tuscan ravioli on a plate. Top with grated parmesan & enjoy!
