Creamy Ravioli with Spinach & Sun-Dried Tomatoes

Ravioli (Spinach & ricotta)
30 g
Sun-dried tomatoes
1 tbsp
Crème fraîche
2 handfuls
Spinach (fresh)
1 tbsp
Parmesan (grated)
1/4 clove
Garlic

- Step 1
Drain & slice the sun-dried tomatoes. - Step 2
In a pot of salted boiling water, cook the ravioli according to package instructions. - Step 3
Meanwhile, heat a drizzle of olive oil in a pan, over medium heat. Add the grated garlic & sauté 30 sec, stirring. - Step 4
Add the sun-dried tomatoes & crème fraîche. Mix to evenly coat. - Step 5
Add the spinach leaves & a small drizzle of water.Cook for another 2 min, stirring. - Step 6
Once cooked through, drain the ravioli. Add it to the pan with the grated parmesan. Re-season to taste & cook for another 1-2 min, stirring gently. - Step 7
Serve the Tuscan ravioli topped with more grated parmesan & enjoy !
