Sun-dried tomatoes

  • Step 1
    Drain then slice the sun-dried tomatoes.
  • Step 2
    In a pot of salted boiling water, cook the ravioli according to package instructions. Once cooked through, drain the ravioli.
  • Step 3
    Meanwhile, heat a drizzle of olive oil in a pan, over medium heat. Add the grated garlic & sauté 30 sec, stirring.
  • Step 4
    Add the sun-dried tomatoes & crème fraîche. Mix well.
  • Step 5
    Add the spinach leaves & a splash of water. Continue cooking for another 2 min, stirring.
  • Step 6
    Add the drained ravioli to the pan with the grated parmesan. Season with pepper, and mix to evenly coat.
  • Step 7
    Serve the Tuscan ravioli on a plate. Top with grated parmesan & enjoy!
