Creamy Mushroom Chicken with Polenta

White mushrooms (whole)

Crème fraîche

Whole grain mustard

- Step 1
Peel & thinly slice the onion. - Step 2
Wash & slice the mushrooms. - Step 3
Heat a drizzle of olive oil in a pan. Add the mushrooms & onions. Season with salt & pepper. Brown the mushrooms for 5-8 min over high heat. - Step 4
In another second pan, heat a drizzle of olive oil on medium heat. Add the chicken & season with salt & pepper. Cook the chicken for 5-7 min on each side until fully cooked. - Step 5
Meanwhile, prepare the polenta according to package instructions. Once it has slightly thickened, add a dab of butter & season with pepper & spices to your liking. Mix well & set aside to keep warm. - Step 6
Once the mushrooms are cooked, add the cream & mustard. Mix & simmer on low heat for an additional 1-2 min to thicken the sauce. - Step 7
Serve the polenta with the chicken & the creamy sauce on top. Garnish with fresh herbs if you have any, enjoy!
