Baby bella mushrooms (whole)

Pancetta (cubed)

- Step 1
Cook the eggs for 7 minutes in a pan of boiling water. Once cooked, immerse them in cold water to stop the cooking. Remove the shell carefully. Reserve. - Step 2
At the same time, wash then slice the mushrooms. - Step 3
In a pan, add a drizzle of olive oil, then brown the mushrooms for about 5 minutes over high heat. Add salt and pepper. - Step 4
Once the mushrooms are cooked, add the bacon and cook for 5 minutes. - Step 5
Once the bacon and mushrooms are cooked, add the noodles and 3 tablespoons of water per person. Mix, then cook covered for 1 minute. Then add the cream and mix again. Continue cooking for an additional 2 minutes. - Step 6
On a plate, add the udon noodles and the soft-boiled egg cut in half. Option: add a few sprigs of chopped chives, if you have them. Enjoy!
