Crème fraîche

- Step 1
Peel & finely mince the shallots. - Step 2
Pat the chicken dry with a paper towel. Cube the chicken into bite-sized pieces. - Step 3
Remove the chorizo skin & thinly slice. - Step 4
Heat a drizzle of oil in a pan ,over medium heat. Add the shallots & sauté for 1-2 min. - Step 5
Add the chicken to the pan. Season with salt & pepper. Cook, stirring for 5-6 min. - Step 6
Meanwhile, in a pot of salted boiling water, cook the pasta according to package instructions. Once cooked through, reserve a small ladle of cooking water before draining the pasta. - Step 7
Add the chorizo to the pan with the chicken. Cook for another 2 min, stirring. - Step 8
Stir in the crème fraîche, grated parmesan cheese & reserved cooking water. Simmer for another min, until the sauce begins to lightly thicken. - Step 9
Turn off the heat & mix in the cooked pasta until everything is well combined. - Step 10
Serve the creamy chorizo pasta in a shallow dish or a bowl. Top with extra grated parmesan cheese & re-season to taste. Enjoy !
