Basil (fresh)

Parmesan (shaved)

- Step 1
In a pot of salted boiling water, cook the pasta according to package instructions. Once cooked through, drain the pasta. - Step 2
Meanwhile, toast the slivered almonds in a hot dry pan for a couple of min, until golden. Set aside. - Step 3
Slice the avocado in half. Remove the skin & dice the avocado. - Step 4
Prepare the avocado cream. In a blender, add : the avocado, basil leaves, 'herbes de Provence', parmesan shavings & 1 tablespoon of olive oil per serving. Blend until you obtain a creamy texture. - Step 5
Add the avocado cream into the pot with the drained pasta. Season with pepper & mix to evenly coat. - Step 6
Serve the creamy pasta in a plate. Top with the toasted almonds, parmesan shavings & fresh basil. Re-season to taste & enjoy !
