Cream of Cauliflower Soup

Cauliflower (fresh)

Yellow onion
1/4 clove
Garlic
1 tbsp
Parmesan (grated)

Vegetable bouillon (cube)

- Step 1
Wash & cut the broccoli into florets. Slice the stem into small cubes. Mince the onions and garlic. - Step 2
In a large pot, add a dab of butter, onions and garlic. Cook for 2 minutes. Add a drizzle of olive oil and the cauliflower. Cook on a medium heat for 5 minutes, stirring, until the cauliflower is golden. - Step 3
Add enough water to cover the cauliflower, cover and simmer for 15 minutes. - Step 4
Add parmesan cheese (optional) to the pot and blend until smooth with an immersion blender. Add a bit of water if it's too thick. Season with salt & pepper to taste and serve. Enjoy! - Step 5
Optional: Add a bit of cream for a decadent touch!
