Corn Fritters with Yogurt Sauce

Corn (canned)

2 tbsp
Flour (all-purpose)

Egg

20 g
Parmesan (grated)

1 handful
Spring mix lettuce

2 tbsp
Greek Yogurt (plain)

30 ml
Milk (whole)

1/2 tsp

- Step 1
Drain the corn. - Step 2
In a bowl, add the flour, baking powder, milk & egg. Mix with a whisk. - Step 3
Add Parmesan cheese and corn. Season with salt, pepper & spices of your choice - e.g. : 'piment d'Espelette, paprika or dried herbs. Stir to combine. - Step 4
Heat a few drizzles of olive oil in a skillet on medium heat. - Step 5
Add a ladle of the mixture to the pan & flatten slightly into an even shape. - Step 6
Brown for 3 minutes on each side on medium heat. - Step 7
Place corn fritters on paper towels before serving. - Step 8

Serve the fritters with the yogurt sauce & salad. Season the salad to taste and enjoy!
