Corn Fritters with Yogurt Sauce

Corn (canned)
2 tbsp
Flour (all-purpose)

Egg
20 g
Parmesan (grated)
1 handful
Spring mix lettuce
2 tbsp
Greek Yogurt (plain)
30 ml
Milk (whole)
1/2 tsp
Baking powder

Drain the corn. - Step 2
In a bowl, add the flour, baking powder, milk and egg. Mix with a whisk. - Step 3
Add Parmesan cheese and corn. Season with salt and pepper* and mix. *Check out our tips for this step - Step 4
Heat a few drizzles of olive oil in a skillet on medium heat. - Step 5
Add a ladle of the mixture to the pan and flatten slightly into an even shape. - Step 6
Brown for 3 minutes on each side on medium heat. - Step 7
Place corn fritters on paper towels before serving. - Step 8
In a bowl, mix the Greek yogurt with salt, pepper and a drizzle of olive oil. Optional: add a pinch of chili pepper. - Step 9
Serve the fritters with the yogurt sauce and salad. Season the salad to taste and enjoy!
