Corn (canned)
80 g
Potato
2 slices
Bacon
20 ml
Heavy cream

Yellow onion
1/2 clove
Garlic

Turmeric (ground)

- Step 1
Peel & slice the onions into thin strips. - Step 2
Peel & small dice the potatoes. - Step 3
Melt a knob of butter in a pot, over medium heat. Add the grated garlic & onions. Sautée for 1-2 min, stirring. - Step 4
Add the potatoes, drained sweetcorn, ground turmeric, stock cube & 180ml of water per serving to the pot. Stir then cover & leave to simmer for 15-20 min, over low heat. - Step 5
Meanwhile, in a hot pan, add the bacon strips. Grill for 2 min, over high heat, until golden & crispy. Set aside on a paper-lined plate. - Step 6
Once cooked through, stir in the cream. - Step 7
Serve the corn chowder in a bowl. Top with the crispy bacon & fresh basil, if you have some. Re-season to taste & enjoy !
