  • Step 1
    Pelle and finely mince the onions and garlic.
  • Step 2
    Melt a knob of butter (or olive oil) in a pot. Add the onions & garlic. Sautee for 2 minutes.
  • Step 3
    Peel and chop the potatoes into small cubes.
  • Step 4
    Slice the bacon.* *Check out our tips for this step
  • Step 5
    Add the potatoes, sweetcorn, bacon, vegetable stock cube and a cup of water /person. Stir, cover and leave to simmer for 15-20 minutes.
  • Step 6
    Towards the end of the cooking, add the cream. Season with salt & pepper to taste.
  • Step 7
    Serve in a bowl. Season to taste & add some fresh basil, is you have some. Enjoy !
