  • Step 1
    Peel & slice the onions into thin strips.
  • Step 2
    Peel & small dice the potatoes.
  • Step 3
    Melt a knob of butter in a pot, over medium heat. Add the grated garlic & onions. Sautée for 1-2 min, stirring.
  • Step 4
    Add the potatoes, drained sweetcorn, ground turmeric, stock cube & 180ml of water per serving to the pot. Stir then cover & leave to simmer for 15-20 min, over low heat.
  • Step 5
    Meanwhile, in a hot pan, add the bacon strips. Grill for 2 min, over high heat, until golden & crispy. Set aside on a paper-lined plate.
  • Step 6
    Once cooked through, stir in the cream.
  • Step 7
    Serve the corn chowder in a bowl. Top with the crispy bacon & fresh basil, if you have some. Re-season to taste & enjoy !
