  • Step 1
    Cook the rice according to package instructions.
  • Step 2
    Wash, peel and cube the sweet potatoes.
  • Step 3
    In a pot, heat a knob of butter or a splash of olive oil. Cook the sweet potatoes for 2-3 minutes.
  • Step 4
    Cover the sweet potatoes with water and leave to simmer for 10 minutes. Once cooked through, season with salt & pepper & puree them using a fork or a potato masher. Add a knob of butter or a drizzle of olive olive & stir.
  • Step 5
    Meanwhile, cook the eggs in a pot of boiling water for 6 minutes. Immediately add the eggs in a bowl of cold water to stop it cooking further. Peel & rinse them under water.
  • Step 6
    Make the salad dressing. In a small bowl, mix : the lemon juice with a tablespoon of olive oil per person, and seasoning.
  • Step 7
    Serve the rice with the sweet potato purée et the salad with its dressing. Add the poached egg on top and season with salt & pepper to taste. Sprinkle over with crushed pistachios, if you have some. Enjoy !
