- Step 1
Preheat the oven to 210°C. Wash the vegetables. Cut the tomatoes in quarters. - Step 2
Cut zucchini in thin half-moon slices. - Step 3
Quarter the onions. - Step 4
Cut the peppers in big cubes. - Step 5
Put all the vegetables in a baking dish. Add olive oil, salt & pepper* and mix. Bake for 20 minutes. *Check out our tips for this step - Step 6
After 20 minutes, remove the dish from the oven. Add the cod on top of the vegetables with another drizzle of olive oil and a sprinkle of salt & pepper. Bake for another 10 minutes. - Step 7
Remove from the oven and serve. Enjoy!
