recipe

  • Step 1
If you are using frozen cod filets, defrost them by placing them in an airtight (ziplock) freezer bag and immersing them in cold water for 15 minutes.
  • Step 2
    Peel and dice the potatoes.
  • Step 3
Boil a pot of hot water, add the potatoes to the pot and cook for 15 minutes.
  • Step 4
Meanwhile, finely chop the shallot. Brown it in half the butter for 4 minutes. Add the white wine, capers and the lemon juice. Warm over a very low heat for the rest of the cooking.
  • Step 5
Stop cooking the potatoes: they should be tender. (Cook for 2 more minutes if this is not the case). Using a fork, mash the potatoes with the milk and the other half of the butter and season with salt and pepper.
  • Step 6
In a frying pan, fry the cod with a knob of butter for 2 minutes on each side.
  • Step 7
Serve the mashed potato with the cod and pour the caper butter on top. Season with salt and pepper. Serve and enjoy!
