Corn (canned)

Cooked shrimp

Coconut milk

- Step 1
Heat a drizzle of oil in a pan. Add the rice and stir-fry for 2 minutes over medium heat. - Step 2
Lower the heat, add 50 ml water per portion and the coconut milk. Season with salt and pepper, cover and simmer over low heat for 20 minutes. - Step 3
After 20 minutes, test the rice; it should be slightly "al dente." Add the corn and cooked shrimp. Stir over low heat until heated through, then serve immediately. - Step 4
Season with salt and pepper and add some cilantro (optional). It's done!
