Coconut milk

Milk (whole)

Coconut (shredded, unsweetened)

- Step 1
In a warm pot, add the milk. Bring to a boil, over medium heat. - Step 2
Lower the heat & add the rice & sugar. Stir & leave to simmer for 20 min, stirring frequently. - Step 3
After 20 min, add half of the coconut milk & stir to combine. Continue cooking until the rice is fully cooked through. - Step 4
Remove the pot from the stove & add the remaining coconut milk & grated coconut. Stir & set aside to fully cool down. - Step 5
Serve the coconut rice pudding in a bowl & top with some lime zest & extra grated coconut. Enjoy !
