  • Step 1
    Wash the carrots and thinly slice them.
  • Step 2
    Wash the mushrooms and thinly slice them.
  • Step 3
    In a large pot, add a splash of olive oil, green curry paste, carrots, and 1.5 cups of water per person. Cover and leave to simmer for 5 minutes.
  • Step 4
    Meanwhile, in another pot, cook the eggs in water for 7 minutes. Once cooked, place in a bowl of cold water to stop them cooking further.
  • Step 5
    After 5 minutes, add the coconut milk, noodles and mushrooms to the first pot. Season, cover and simmer for 5 minutes more.
  • Step 6
    Meanwhile, carefully shell the eggs.
  • Step 7
    Serve the noodles in a bowl with the egg, cut in half.
  • Step 8
    Optional: if you have any, add some mint leaves and lime slices before serving.
