Coconut Curry Rice with Zucchini

Zucchini
70 g
White rice (long grain)
1/2 tsp
Curry powder
50 ml
Coconut milk
10 g
Peanuts
optional
1/10 bunch
Mint (fresh)

In a pot of salted boiling water, cook the rice according to package instructions. Once cooked though, drain the rice. - Step 2
Meanwhile, wash & slice the zucchini into half-moons. - Step 3
Heat a drizzle of olive oil in a pan, over high heat. Add the zucchini. Season with salt, pepper & curry powder. Mix, then brown them for 6-7 min. - Step 4
Reduce the heat, then pour in the coconut milk. Mix & continue cooking for another 3-4 min, until the sauce has thickened & the zucchini are tender. - Step 5
Add the drained rice to the pan & stir to evenly coat for a few min. - Step 6
Serve the zucchini curry in a bowl. Top with a drizzle of coconut milk, freshly grated pepper & sprinkle over with crushed peanuts & fresh mint, if you have some. Enjoy !
