  • Step 1
    In a pot of salted boiling water, cook the peas for 8 min.
  • Step 2
    Meanwhile, prepare the coconut fish sticks. Slice the cod filets into strips.
  • Step 3
    In a shallow dish, crack the eggs. Season with salt & pepper then whisk with a fork. In a second shallow dish, add the breadcrumbs & grated coconut. Dredge the fish sticks in the egg mixture followed by the breadcrumb / coconut mix.

    Once cooked through, drain the peas. Add them back to the pot with the cream. Season with salt & pepper, then blend until smooth. If needed, add a splash of water & blend until desired consistency. Keep warm.

    Melt the butter in a pan, over high heat. Add the coconut fish sticks & sauté for 4-5 min, flipping halfway through.
  • Step 6
    Serve the mashed peas in a plate with the coconut fish sticks. Re-season to taste & enjoy !
