Coconut Chicken Curry & Cherry Tomatoes

Coconut milk

Curry powder

- Step 1
Cook the rice according to the package instructions (about 10 minutes in a pot of boiling salted water). Drain at the end of cooking. - Step 2
Meanwhile, cut the chicken into strips. Remove the tendons if necessary. - Step 3
Peel and cut the onion into thin strips. - Step 4
Add a drizzle of olive oil to a pan. Add the chicken strips, onion and curry powder and stir for 2 minutes over high heat. Season with salt and pepper. - Step 5
Continue cooking for 4 minutes until the chicken begins to brown, then add the cherry tomatoes. - Step 6
Pour the coconut milk and 3 tablespoons of water per person and mix. Cover and let cook for 5 minutes on low heat. - Step 7
Uncover and mix one last time before serving. - Step 8
Serve the curry hot with the rice, add salt and pepper to taste and sprinkle with fresh cilantro if you have them. Enjoy!
