  • Step 1
    Cook the rice according to the package instructions (about 10 minutes in a pot of boiling salted water). Drain at the end of cooking.
  • Step 2
    Meanwhile, cut the chicken into strips. Remove the tendons if necessary.
  • Step 3
    Peel and cut the onion into thin strips.
  • Step 4
    Add a drizzle of olive oil to a pan. Add the chicken strips, onion and curry powder and stir for 2 minutes over high heat. Season with salt and pepper.

    Continue cooking for 4 minutes until the chicken begins to brown, then add the cherry tomatoes.

    Pour the coconut milk and 3 tablespoons of water per person and mix. Cover and let cook for 5 minutes on low heat.

    Uncover and mix one last time before serving.

    Serve the curry hot with the rice, add salt and pepper to taste and sprinkle with fresh cilantro if you have them. Enjoy!
