White rice (long grain)

- Step 1
In a pot, cook the rice according to pack instructions. Strain once cooked. - Step 2
Peel and dice the carrot and onion. - Step 3
Peel & small dice the onion. - Step 4
Heat a drizzle of olive oil in a pot, over low heat. Add the onions & carrots & cook for 10 min. - Step 5
Add the corn, red beans and crushed tomatoes. - Step 6
Season with paprika, salt & pepper.* Cover & leave to simmer 15 min, over low heat. *Check out our tips for this step - Step 7
Serve the chilli with rice.
