In a pot, cook the rice according to pack instructions. Strain once cooked. - Step 2
Peel and dice the carrot and onion. - Step 3
Peel and dice the onion. - Step 4
Add a splash of olive oil to another pot and cook the onions and carrots on a low heat for 10 minutes. - Step 5
Add the corn, red beans and crushed tomatoes. - Step 6

Serve the chilli with rice.
