- Step 1
Peel & dice the onion. - Step 2
Heat a drizzle of oil in a pan over medium heat. Add the onion. Cook, stirring for 2 min. - Step 3
Add the beef. Season with salt & pepper. Cook for 3-5 min, breaking up the meat with a spatula as it cooks. - Step 4
Add the kidney beans & their juices, the tomatoes, oregano & a splash of your favorite hot sauce (optional). - Step 5
Cover & simmer for 10 min. - Step 6
Meanwhile, cook the rice according to the package instructions. - Step 7
Serve the chili over a bed of rice. Add a dollop of sour cream (optional). - Step 8
Garnish with chopped cilantro (optional). Enjoy!
