Chickpea Skillet with Spinach & Egg

Spinach (frozen)
100 g
Chickpeas (canned)
40 g
Feta cheese (block)
2
Egg
1/2 clove
Garlic
1/2 tsp
Smoked Paprika

- Step 1
Heat a drizzle of olive oil in a pan, over medium heat. Add the frozen spinach (you can also use fresh spinach), grated garlic & smoked paprika. Cook 6–7 min until the spinach is fully defrosted. Season with salt & pepper. - Step 2
Drain the chickpeas & add them to the pan with the spinach. Re-season to taste & stir. Continue cooking for another 2-3 min. - Step 3
Make holes in the mix & delicately crack the eggs in. Season them with salt & pepper. Cover & leave to cook for 3-4 min, over low heat. - Step 4
Once the eggs are cooked to your liking, top with crumbled feta & extra smoked paprika. Eat warm with some toasted bread rubbed in garlic & yogurt sauce. Enjoy !
