Spinach (frozen)
100 g
Chickpeas (canned)
40 g
Feta cheese (block)

1/2 clove
Garlic
1/4 tsp

- Step 1
Heat a drizzle of olive oil in a pan. Add the frozen spinach, minced or grated garlic and paprika. Cook 5–6 minutes over medium heat, or until spinach is fully defrosted. Season with salt and pepper. - Step 2
Add the chickpeas & stir to combine. Season with salt & pepper. Simmer for another 2 min. - Step 3
Using a wooden spoon, form one well in the mixture for each egg. Break the eggs into the wells. Cover the pan & cook for 3-4 min. - Step 4
Adjust seasoning to taste. Remove from heat & sprinkle with crumbled feta & a pinch of paprika. Serve & enjoy !
