Arugula

Roasted bell peppers

Chickpeas (canned)

Feta cheese (block)

Drain, then rinse the chickpeas. - Step 2
Prepare the salad dressing. In a bowl, mix : the lemon juice & a teaspoon of olive oil per person. Season with salt & pepper. - Step 3
In a salad bowl, add : the arugula, grilled peppers, & chickpeas. Pour the dressing over & mix well to combine. - Step 4
Serve the salad & top with crumbled feta. Re-season to taste & enjoy !
