Cook the quinoa in a pot of boiling water, according to packet instructions. - Step 2
In another pot of boiling water, cook the green beans for 6 minutes. Strain and add to a bowl of cold water to stop them cooking further. - Step 3
Strain and rinse the chickpeas. Serve the quinoa with the green beans and chickpeas.* Add crumbled feta on top. (Optional: add some chive). *Check out our tips for this step - Step 4
Season with olive oil, salt and pepper, and a squeeze of lemon.
