- Step 1
In a pan of boiling salted water, cook the potatoes for 15 minutes. - Step 2
Meanwhile, wash then cut the broccoli into florets. - Step 3
Prepare the herb sauce. Wash then chop the parsley. In a bowl, add: cream, chopped parsley, lemon zest & juice. Salt, pepper and add a drizzle of olive oil, then mix. - Step 4
After 15 minutes of cooking the potatoes, add the broccoli to the pan. Cook for an additional 5 minutes. - Step 5
Heat a drizzle of olive oil in a pan and add the chicken. Add salt and pepper and brown the chicken for 4-5 minutes on each side over medium heat until nicely browned. - Step 6
Once the vegetables are cooked, drain them. - Step 7
On a plate, add: vegetables and chicken. Sprinkle everything with herb sauce. Add a few parsley leaves, if you have any left, it's ready!
