Chicken with Roasted Veggies & Feta

- Step 1
Preheat the oven to 200°C. Peel then cut the red onions into thin quarters. - Step 2
Wash then cut the zucchini in half lengthwise, then diagonally. - Step 3
Wash then cut the lemon into thin slices. - Step 4
In a baking dish, place the onions, zucchini and lemon slices. Add a drizzle of olive oil and mix well. - Step 5
Add the cherry tomatoes and the feta blocks cut in half. Season with salt and pepper and drizzle with olive oil. Bake for 15 minutes at 200°C. - Step 6
After 15 minutes, remove the vegetables from the oven. Add the chicken to the dish. Season with salt and pepper and drizzle with olive oil. Bake again for 20 to 25 minutes at 200°C. - Step 7
Meanwhile, in a pot of boiling salted water, cook the pasta according to package directions. At the end of cooking, drain them then keep warm. - Step 8
Once the vegetables and chicken are nicely browned, remove the dish from the oven. Serve the orzo pasta with the vegetables, roasted feta and chicken. Add a few basil leaves, if you have them, and re-season to taste. Enjoy!
