  • Step 1
    Cook the rice according to the instructions on the package.
  • Step 2
    Cut the chicken into cubes.
  • Step 3
    Heat a drizzle of olive oil in a pan on medium-high heat and add the chicken. Add salt and cook for 5 minutes.

    While the chicken is cooking, cut the cucumber into thin long strips using a vegetable peeler.
  • Step 5
    Make the sauce: mix the coconut milk and the peanut butter.
  • Step 6
    On a plate, serve the rice, fresh cucumber and chicken.
  • Step 7
    Serve the rice and chicken with the sauce. Season with salt & pepper. Optional: Top with fresh cilantro. Enjoy!
