Chicken breast

Cucumber
1 tbsp
Coconut milk
1/2 tbsp
Peanut butter

Cook the rice according to the instructions on the package. - Step 2
Cut the chicken into cubes. - Step 3
Heat a drizzle of olive oil in a pan on medium-high heat and add the chicken. Add salt and cook for 5 minutes. - Step 4
While the chicken is cooking, cut the cucumber into thin long strips using a vegetable peeler. - Step 5
Make the sauce: mix the coconut milk and the peanut butter. - Step 6
On a plate, serve the rice, fresh cucumber and chicken. - Step 7
Serve the rice and chicken with the sauce. Season with salt & pepper. Optional: Top with fresh cilantro. Enjoy!
