- Step 1
Preheat the oven to 190°C. Cut the zucchini in half lengthwise and then cut into slices. - Step 2
Quarter the tomatoes. - Step 3
Remove the seeds from the peppers and cut into slices. - Step 4
Add the veggies and garlic (grated or chopped) to a baking dish. Add the basil, salt & pepper and a drizzle of olive oil. Mix to combine. - Step 5
Add the chicken thighs and season with salt & pepper. Bake for 50 minutes at 190°C. - Step 6
Remove the dish from the oven and serve with some fresh basil leaves. Enjoy!
