Chicken Soup with Rice Noodles & Veggies

Chicken breast

Rice noodles

Baby bella mushrooms (whole)
50 g
Carrots (fresh)
50 g
Peas (frozen)

Soy sauce

Chicken bouillon (cube)

- Step 1
Heat a drizzle of olive oil in a pan. Add the chicken and brown it for 2 minutes over high heat on one side. Turn it over and let it cook for another 8 minutes over medium heat. Add salt and pepper. Reserve. - Step 2
Cook the rice noodles according to package directions. - Step 3
Meanwhile, wash then cut the mushrooms into thin slices. - Step 4
Wash, peel the carrot then make tagliatelle using a vegetable peeler. - Step 5
Shred the chicken or cut it into slices. - Step 6
Heat a pan of boiling water with 200ml of water per person. Add the stock cube and soy sauce.* Then pour in the peas and mix. *Check out our tips for this step - Step 7
In a deep plate, add the shredded chicken, carrot slices, mushrooms and drained rice noodles. - Step 8
Pour in the broth with the peas, it's ready!
