Chicken cordon bleu & homemade mash

Chicken breast

Ham (deli slices)

Swiss cheese (slices)

- Step 1
Peel and chop the potatoes into cubes. - Step 2
Insert the whisk into the thermomix bowl (make sure the whisk is well installed between the blades). Add the potato cubes and milk to the bowl. Start cooking for 24 min/100°C/reverse direction/speed 1/without a cup. - Step 3
Flatten the chicken, using the back of a skillet. Fold the meat in half, checking that the 2 sides can touch. If there is excess meat, cut off the edges. - Step 4
Place a slice of ham and Emmental slices inside the chicken. Fold it over itself and trim anything that sticks out. Put the breadcrumbs in one bowl and a beaten egg in another. - Step 5
Optional: Pass the blue cord in the flour if you have any. (This will make the meat more tender when cooking) - Step 6
Then successively dip them in the beaten egg and breadcrumbs twice. - Step 7
In a hot pan, melt a knob of butter and fry the cordon bleus for 5 min on each side. - Step 8
Once the 10 minutes is up, finish cooking the cordon bleu over low heat, covering the pan for 10 minutes more. - Step 9
When the thermomix timer stops, add the butter. Season with salt and pepper and blend for 20 seconds/reverse/speed 2 (if you want a very smooth purée, turn off the reverse function). - Step 10
Serve the mash with the cordon bleu. Season with salt and pepper, and enjoy!
