Chicken coco-cilantro skewers

White rice (long grain)
1/5 bunch
Cilantro (fresh)
1/4 clove
Garlic

Coconut cream

- Step 1
Chop the chicken into cubes, then slide on to the skewers.* If you're not using skewers, cook the chicken breasts whole or chop into cubes (the dish will be equally as delicious). *Check out our tips for this step - Step 2
In a pot of boiling salted water, cook the rice according to instructions. Strain once cooked. - Step 3
Cook the skewers in a hot pan with a bit of olive oil on a medium heat, 2 minutes on each side. Once each 4 sides are golden, cover and leave to cook on a low heat for 3 to 4 minutes. - Step 4
Meanwhile, peel the garlic (remove the germ). - Step 5
In a blender, add: cilantro (save some leaves to garnish), garlic, coconut cream, lime juice, salt, pepper. Blend until you have a smooth mixture. - Step 6
Once the chicken is cooked, add a soup spoon of water per person. Serve the rice with the skewers, sauce on top, some chopped cilantro and lime wedges.
Recipe tip
If you're using wooden skewers, soak them in water for 30 min before grilling to prevent burning.
