Chicken & Lentil Soup

Chicken breast

Red lentils (dry)

Carrots (fresh)

Curry paste (red)

Tomato sauce

Yellow onion
1/4 clove
Garlic
25 ml
Coconut milk
1 cm
Ginger (fresh)

- Step 1
Peel & finely dice the onions. - Step 2
Peel & slice the carrots into rounds. - Step 3
Peel & finely mince the ginger. - Step 4
Chop the chicken into bite-size chunks. - Step 5
Heat a drizzle of olive oil in a pot, over high heat. Add the chicken & sauté for 30 sec, stirring. - Step 6
Add the minced garlic, onions, ginger & curry paste. Stir & continue cooking for 2-3 min, stirring. - Step 7
Season with salt & pepper. Add the tomatoes, stir & bring to a light simmer. - Step 8
Add the lentils, carrots & 200ml of warm water per serving. Stir, cover & leave to simmer for 20 min, over low heat. - Step 9
Once the carrots are tender, add the coconut milk & stir to combine. Serve the chicken & lentil soup in a bowl topped with fresh coriander, if you have some. Re-season to taste & enjoy !
