Tomato sauce

Ginger (fresh)

Coconut milk

- Step 1
Finely chop or grate the onion and garlic. - Step 2
Wash, peel and cut the carrots into slices. - Step 3
Peel the ginger and finely chop it. - Step 4
Chop the chicken into bite-size chunks. - Step 5
In a large pot, add a drizzle of olive oil, the chicken, onions, garlic, ginger and curry paste. - Step 6
Cook on high for 2-3 minutes, stirring frequently to cook the chicken on all sides. - Step 7
Season with salt & pepper and add the tomatoes. - Step 8
Add the carrots, lentils and 1 cup of water per person. - Step 9
Let it cook on low heat covered for 20 minutes. - Step 10
Once cooked, add the coconut milk and season with salt & pepper to your taste. (Optional: add some fresh cilantro) Enjoy!
