- Step 1
Remove the rind and chop the celery into pieces. Then rince it with clear water. - Step 2
Mince the onion. - Step 3
In a large pot, add a knob of butter (or olive oil) and cook the onions for 2 minutes. - Step 4
Add the celery and cook for 5 more minutes until lightly golden. - Step 5
Add enough water to cover the celery and add the vegetable stock, salt and pepper. - Step 6
Cover and simmer for 15 minutes. - Step 7
The celery should be tender and easily mashed, continue to cook for a few more minutes if it's not. - Step 8
Once the celery is cooked, add the cream and blend together. Season to taste. - Step 9
Add a bit of water if the consistancy is too thick. - Step 10
Serve with some crushed nuts (optional) and the crumbled roquefort. Enjoy!
