Cauliflower steak & string beans

- Step 1
Preheat the oven to 210°C. Remove the outer leaves of the cauliflower, cut in half and cut off the stem along with the remaining leaves. - Step 2
Cut a 2 inch "steak" per person. Cut the rest of the cauliflower into florets*. *Check out our tips for this step - Step 3
In a large pot of salted boiling water, add the steaks and florets. Cook on medium heat for 8 minutes. - Step 4
While the cauliflower is cooking, make the marinate. Add the paprika, maple syrup, lemon juice and grated garlic to a bowl. Add salt & pepper and one tablespoon of olive oil (per portion) and mix. - Step 5
Salez, poivrez et versez 1 c. à soupe d'huile d'olive/personne. Mélangez. - Step 6
After 8 minutes, remove the cauliflower steaks from the water and leave the florets for another 10 minutes. - Step 7
Place the cauliflower steaks on a baking sheet, cover with the marinate and bake for 15 minutes at 220°C. - Step 8
In the meantime, make the string beans. Cook for about 12 minutes (or less if you like them crispy) in a pot of salted boiling water. - Step 9
When the cauliflower florets are finished, drain and mash with a fork or add to a blender with salt, pepper and one teaspoon of olive oil (per portion). - Step 10
Add some lemon zest. - Step 11
Drain the string beans. - Step 12
Remove the steaks from the oven and serve with the mashed cauliflower and string beans. Season with salt & pepper and enjoy!
