Cauliflower Steak & Green Beans

Maple syrup

- Step 1
Preheat the oven to 220°C. Remove the outer leaves of the cauliflower & slice it in half. - Step 2
Cut one thick slice ("steak") per person of approx. 3cm thickness. Cut the remaining cauliflower into florets & small dice the stem. - Step 3
In a large pot of salted boiling water, add the cauliflower & the cauliflower steaks. Cook for 8 min, over medium heat. - Step 4
Meanwhile, prepares the marinade. In a small bowl, combine : the paprika, maple syrup, lemon juice & grated garlic. Season with salt & pepper & add 1 tablespoon of olive oil per portion. - Step 5
After 8 min, set the cauliflower steaks aside & continue cooking the remaining cauliflower for another 10 min. - Step 6
In an oiled oven-proof dish, add the cauliflower steaks. Generously coat in marinade & roast for 15 min at 220°C. - Step 7
Meanwhile, in a second opt of salted boiling water, add the green beans. Cook for 12 min, over medium heat. - Step 8
Once the cauliflower florets are cooked through, drain them. Add a drizzle of olive oil, salt & pepper. Using a potato masher or hand mixer, mash the cauliflower. Optional : add some lemon zest & keep warm. - Step 9
Once cooked through, drain the green beans. - Step 10
Once golden & cooked through, remove the cauliflower steaks from the oven & serve with the mashed cauliflower & green beans. Re-season to taste & enjoy !
