Cauliflower (fresh)

Yellow onion

Coconut milk (full fat)

Curry powder

- Step 1
Peel, then thinly slice the onions. - Step 2
Wash, then cut the cauliflower into bite-sized florets. - Step 3
Heat a drizzle of olive oil in a pot, over medium heat. Add the onions & curry powder. Cook for 2-3 min. - Step 4
Add the cauliflower, veggie stock cube, if you have some & 150 ml of water per person. Season with salt & pepper. Bring to a boil, then cover & let it simmer for 15-20 min, over low heat. - Step 5
Once cooked through, add the coconut milk. Blend, until smooth. If necessary, add a splash of water & blend again. - Step 6
Serve the Cauliflower & Coconut Soup in a bowl. Season to taste & enjoy !
