Cauliflower-Coconut Soup

Finely chop the onions. - Step 2
In a saucepan, add a drizzle of olive oil and the turmeric. Heat for 1 minute over medium-low heat, then add the onions. - Step 3
Sauté over medium heat for 2 minutes. - Step 4
Meanwhile, wash and trim the cauliflower. - Step 5
Using a knife, remove the stem. - Step 6
Separate the florets and chop the stem. - Step 7
Add all of the cauliflower pieces to the pot and sauté for 2 minutes. - Step 8
Add enough water to cover the cauliflower, season with salt and pepper, then cover and simmer for 15 minutes. - Step 9
When the cauliflower is tender, add the coconut milk and puree until smooth using an immersion blender or blender. - Step 10
If the soup is too thick, add a bit of water and adjust seasoning as necessary. - Step 11
